Sunflower relative indigenous to North America that produces beautiful yellow flowers and an edible, potato-like tuber highly prized by chefs worldwide. FIRST TO MARKET! Capture early-season demand by supplying these to restaurants and home cooks weeks before other varieties mature. Manitoba is a hardy, short-season, natural dwarf averaging 2-3 ft. tall. It produces prolific small tubers that grow up to 3 ft. horizontally from the stem in a single season. The tubers do not require peeling and can be cooked whole like fingerlings or eaten raw as a delicious snack. They cook quickly in soups and other dishes without slicing. Sweetest in Spring.
